Homemade Haupia (Coconut Cream) Ice Cream

It's freezing outdoors but I gotta have my ice cream, especially if its COCONUT! While in Hawaii I always buy Roselani Tropics Ice Cream. My favorite is Haupia and Chocolate Macadamia Nut. I bought an Ice Cream attachment for my KitchenAid Mixer. I also found an "eggless" Coconut Cream Ice Cream Recipe from http://ice-cream-recipes.com. This is such a creamy recipe! I have just made some for Thanksgiving this Thursday and just love how coconutty it is. So here's the recipe....enjoy!

Ingredients:
1 cup Milk
1 (14oz) can of Cream Of Coconut (Coco Real, Coco Lopez or Coco Colada brand)
1½ cups Heavy Cream
3-4 Tablespoons Sweetened Flaked Coconut (optional)

Equipment:
Blender
Ice Cream Maker
Spatula

Instructions:
In a blender, combine the Milk and Cream of Coconut and mix thoroughly.

Add in cream and mix thoroughly.

Pour into container of ice cream maker, then add flaked coconut and freeze according to manufacturer's instructions. When ice cream is done, using a rubber spatula, transfer ice cream into a container.

Set overnight for complete ripening process.

NOTE: Do not confuse Cream of Coconut with coconut milk or cream. Cream of Coconut is sweetened and this is what adds the sweetness to this recipe.
